I’ve got Pajero on the brain and can’t shake it. A little short on power, but pretty damn perfect outside of that....
I’m pretty sure this will be my next car. I’ll put on a 2" lift, 4.9 gears with lockers, and some 35's and have a great rig.

I’ve seen this build, it’s definitely nice. The 4wd system is definitely lacking though. If you want a LC100 on a budget, a Tahoe is where you should be looking. Just my $.02.

I also like these a lot. The Limited is the one with the good transfer case. 01-02 has a rear LSD, 03-06 is open rear diff plus traction control. Not sure if you can put a locker on the LSD.

Tahoes also have 100 more horsepower, better parts availability, a 4wd system that finicky isn’t sensor dependent (later 3rd Gen Monteros)....
And yea, this little thing won the Dakar last year:

What’s lacking about the 4wd system? Its transfer case has the usual 2H, 4H, 4L modes and also has a center LSD for awd on-road driving.

Lordy, if you’re going to link to a 13 minute video for one specific little point at least have the courtesy of linking to the specific part of the video. The only part of that video that I skipped around to find anything about traction or stability control is he says the low range automatically disables the stability control and in high range you need to turn it off yourself.
The 01-02 Limited has a rear LSD and no traction control. The 03-06 has an open rear diff and traction control. Apparently (although not that I can find anything about this in your video) the traction control stays on when you disable stability control. The button is in front of the shifter.
If you want to avoid the traction control get an 01-02. But many people are very happy with the 03-06 traction control.
